docs(onset): the Onset page and agent guide say what changed

The page claimed two changes adding a function at one spot always both go
in; it now says when, and that a merge never declares one thing twice. It
adds landing again safely, the workspace .git for editors, sessions the host
can't read, on git mirror for teams keeping GitHub, and on watch. The agent
guide covers duplicate conflicts, retrying a land and empty_change.
